Σ’ αυτό τον κόσμο, όλοι είμαστε περαστικοί και ο καθένας στο πέρασμα του απ’ αυτή την ζωή αφήνει κάτι πίσω του για να τον θυμούνται αυτοί που θα τον ακολουθήσουν στο αιώνιο ταξίδι. Έτσι χαμογελαστός γεμάτος καλοσύνη θα μένει ο αείμνηστος Γιώργος Νιοτής στην μνήμη των ανθρώπων της παρέας του, που τον γνώρισαν από κοντά, δούλεψαν, μίλησαν, έφαγαν, ήπιαν και διασκέδασαν μαζί του.
Ήταν κι αυτός, από την γενιά του τελευταίου μεταναστευτικού ρεύματος, από την Ελλάδα στην Αμερική, της δεκαετίας 1965-75. Ήρθε γεμάτος όνειρα και ελπίδες αλλά με θάρρος και θέληση, να εργασθεί, να προοδεύσει και να πάει μπροστά. Δούλεψε σκληρά στα εστιατόρια, και δεν άργησε, μαζί με συγγενείς τους, να αποκτήσει το Midas Touch Diner στο Roselle Park, NJ.
Άνθρωπος κοινωνικός, ασχολείτο με την παροικίας μας και τον τόπο που γεννήθηκε. Υπήρξε μέλος και υπηρέτησε στο Δ.Σ. του Συλλόγου Πηγαδιωτών Καρπάθου ο «Ποσειδών», και πρωτοστατούσε στις εκδηλώσεις του Συλλόγου. Στην χοροεσπερίδα επέβλεπε στην προετοιμασία των φαγητών και πολλές φορές, με τα αδέλφια, μαγείρευαν και πρόσφεραν τα ψάρια. Επίσης με τα αδέλφια του δώριζαν τα ψάρια για το τραπέζι της Βαγγελίστρας στην Κάρπαθο. Στην δε γιορτή της Βασιλόπιτας ντυνόταν Άγιος Βασίλης, προσφέροντας τα δώρα στα παιδιά.
Επίσης, ήταν θιασώτης της πολιτισμικής παράδοσης του νησιού μας, μέσα στο σπίτι του στο Roselle Park, είχε φτιάξει παραδοσιακό Καρπάθικο σοφά, και στις ελεύθερες ώρες του ασχολείτο με την κηπουρική. Στον ευρύχωρο κήπο στο πίσω μέρος σπιτιού του υπήρχαν όλων των ειδών δέντρα και λαχανικά, ακόμα και συκιές, που δεν είναι εύκολο να ευδοκιμούν στην περιοχή μας, και όταν πήγαινες να τον επισκεφθείς, φεύγοντας, σου είχε ετοιμάσει μια ζάντα με φρούτα και λαχανικά να πάρεις μαζί σου.
Μετά την συνταξιοδότηση του περνούσε τα καλοκαίρια στην Κάρπαθο, και μια και είχε καταγωγή από ναυτική οικογένεια ασχολείτο με την θάλασσα. Την ημέρα ψάρευε σκαδρούπια με την καθετή, και νύχτα, ανοικτά έξω στο Βρόντη με το περιφάνι, ψάρευε αργιάδια.

In this world, we are all passers-by and each one in his passage from this life leaves something behind to be remembered by those who will follow him on the eternal journey. This is how the late George Niotis will remain smiling and full of kindness in the memory of all the people who knew, worked, talked, ate, drank and had fun with him.
He was also from the generation of the last immigrant stream, from Greece to America, in the 1965-75 decade. He came full of dreams and hopes but with courage and will, to work, to progress and to go forward. He worked hard in the restaurants, and it wasn’t long before he, along with relatives, owned the Midas Touch Diner in Roselle Park, NJ.
A sociable person, he was involved with our community and the place of his birth. He was a member and served on the Board of Directors of the “Poseidon” Karpathian society and was a leader in the society events. At the dance party he oversaw the preparation of the food and many times, with the brothers, cooked and donated the fish. Also, he and his brothers donated the fish for Vangelistra’s festivities in Karpathos. And on the feast of Vasilopita, he dressed up as Santa Claus, offering gifts to the children.
Also, he was a devotee of the cultural tradition of our island, inside his house in Roselle Park, he had built traditional Karpathian “sofa” (sleeping quarter), and in his spare time he was engaged in gardening. In the spacious garden at the back of his house grew all kinds of trees and vegetables, even figs, which are not easy to grow in our area, and when you went to visit him, on your way out, he had prepared a basket of fruits and vegetables for you to take with you.
After his retirement, he spent the summers in Karpathos, and since he came from a maritime family, he was involved with the sea. During the day he fished for “scadrupia” (red bass fish) with “katheti” (fishing line with several hooks), and at night, out in the open sea with “perifani” (light) he fished “argiadia” (squids).
